I prefer using a silicone baking mat instead of paper—works wonders, no sticking at all. Cleanup is easier too.

The trick is to use parchment paper, not wax paper. Grease the paper lightly with cornflour + icing sugar mix before spreading the pavlova. After baking, let it cool completely before peeling—it shrinks a bit and comes off easier. Some bakers also flip the whole pavlova onto another sheet and peel the old one off slowly.
