Being a traditional recipe, there are different takes on this black bean mukimo depending on which part of the country you're in. There are some people who add potatoes to this or skip out on the addition of the maize. So, just keep this in mind. All these recipes could work, sure, but all I am saying is, that this adaptation is the best, hahaha.

It is simple, with very few ingredients, and the end product is a sweet, almost tangy, very filling mukimo that you will absolutely enjoy.

In your pressure cooker or saucepan, boil the black beans and maize until softened. Make sure to season the mixture liberally so that the dish has flavour (black beans can be pretty bland without proper seasoning).

While the maize and beans are boiling, boil the matoke as well. Cook until almost soft, then, for the last five minutes of cooking, add in the ripe bananas and boil the two together.

When the black beans are cooked through, drain the water. Mash the beans (they usually make super large mortars to help you do this) until you cannot see individual beans. Taste the beans for seasoning and adjust accordingly.

When the beans are completely mashed, add in the bananas and mash them together, until the mixture melds. You will know you are done when everything is well mashed, and you cannot see the individual ingredients.

There, you have just made Black Bean Mukimo from scratch!

If you want to take this up a notch, fry a bunch onions in some oil, then add them to the mash.
