I reckon the trick is asking open questions. Not just 'yes' or 'no' ones. Ask him 'what' or 'how' questions about his day or hobbies. It gets a better answer.

Then you have to actually listen, mate. Pick up on a small detail he mentions. Ask him more about that specific thing. It shows you are paying attention. Also, share a bit about yourself. It can't be a one-way street. Find something you both like. Maybe a TV show or a sport. It makes things heaps easier. Just be genuine. If the chat doesn't flow, no worries. Sometimes it just doesn't click.

Social engineering is not a computer trick, you know. It is about fooling the person. For example, a common way is making a fake login page. It looks just like the real Instagram page. The person enters their password, but it goes to the scammer. This is called phishing.

Another way is to create a fake story. Like, you pretend to be their friend who is locked out and needs help with a link.

The thing is, this is super illegal. In Canada, you can get in big trouble for this. It is a big invasion of privacy. For sure, it is not worth the risk. It is better to learn how to protect your own account. Use a strong password and turn on two-factor authentication. That's the best thing.
