Roquefort is a sheep milk cheese from Southern France, and is one of the world's best known blue cheeses. Roquefort cheese is a kind of blue cheese. A favorite among kings and popes, this classic blue mold cheese is made from sheep's milk and is easily recognized by its blue veins stretching across its moist. Roquefort (Figure 4) is a popular French cheese, reported to be called in France the 'cheese of kings and popes.
