Why does the temperature remain constant during sublimation?

It’s because all the heat energy is being used for something else. It doesn't make the solid hotter. Instead, that energy is busy breaking the bonds holding the molecules together. It takes a lot of energy to help them escape and turn into a gas. This big job must finish first. After all the solid becomes a gas, then the temperature will start to rise again if you keep adding heat.
